Hot milk cake (vegetable milk or animal milk)


·         For a 20 x 20 cm square mold or round mold 20 or 22 cm in diameter:

180 g flour
1 1/2 tsp baking powder
130 ml milk (vegetable or animal)
60 g butter
3 eggs
110 g sugar


·         To perfume:


1 tbsp rum or other alcohol
Or orange blossom water or other fragrant water
Or/and vanilla, citrus zest, spices...
You can make flour mixtures. In this version, I used 100 grams of wheat flour - 80 grams of small spelled flour
White, blond, or red. This time I put muscovado
Preheat the oven to 180oC.
Combine flour and baking powder. Sift.
In a saucepan, heat milk and butter. With zest, spices, or vanilla if you choose to use it.
Remove from heat just before boiling.
Meanwhile, beat the sugar and eggs with an electric mixer for 5 to 6 minutes, until the mixture becomes frothy and triple in volume.
Stir in the flour mixture, gently and carefully, several times, lifting the dough with a spatula, or spoon.
Then stir in the hot milk, several times as well and in the same way as the flour, gently and carefully.
Pour the mixture into a pan coated with baking paper, or buttered.
Bake for about 30 minutes.
Remove lukewarm and let cool on a wire rack.
Sprinkle with icing sugar.
