Italian Flan - Lattaiolo Toscano

For a 20 x 20 cm mold:

35 cl milk
2 eggs
25 g flour
50 g sugar
The zest of a lemon
1 pinch nutmeg
1/2 tsp powdered star anise (or cinnamon)
1/2 tsp vanilla extract (optional)
Sugar ice for sprinkling

Preheat the oven to 160oC.
Cool the milk.

In a bowl, whisk the eggs and sugar with an electric whisk until fluffy. Stir in flour, spices, vanilla, and lemon zest. Mix well and stir in milk, stirring. The mixture is very liquid, it's normal.
Pour into a pan lined with baking paper.
Bake for about 35 minutes. Adapt the cooking time to the size of the pan and your oven.
Taste warm or fresh sprinkled with icing sugar.
Store in the refrigerator.
