Oatmeal cookies, hazelnuts, and chocolate chips


·         For a dozen cookies:


100 g oatmeal
50 g small spelled flour (or other flour)
40 g blond sugar
40 g 70% dark chocolate pastry
40 g hazelnuts
1 egg
40 g olive oil (or other oil)


Preheat the oven to 180oC.

Crush hazelnuts and dark chocolate.
Combine flakes, flour, sugar, chocolate, and hazelnuts.
Add beaten egg and oil. Mix well.

Take a little dough and form a ball. The dough is a little sticky, slightly moistening the hands to handle it more easily.

Arrange the dough balls on a baking sheet lined with baking paper. Flatten them with the back of a spoon or fork. They are not going to spread out so much.
Bake for 12 minutes. Adapt the cooking to the size of the cookies, the edge should be lightly browned.
Allow cooling for about 10 minutes on the baking sheet and place on a wire rack.

Store in an airtight box.
