Roasted almonds - salted and even a little smoky

Toasted almonds - salted
20 cl water
50 g coarse salt
250 g almonds
Put the water and salt in a small saucepan. Bring to a boil. Mix well so
that the salt is dissolved.
Remove from heat, add almonds and soak for 30 minutes.
Drain.
Preheat the oven to 190oC.
Prepare a baking sheet prepared with baking
paper, then spread the almonds on it
Bake for 11 or 12 minutes. Almonds should
color slightly.
Remove from oven and allow to cool completely
before tasting. They are a little soft at the exit of the oven but when cooling
they become very crunchy.

Salted almonds with
smoked paprika
20 cl water
50 g coarse salt
2 tbsp smoked paprika
250 g almonds
It's the same as the previous recipe but with
a lower temperature.
Put the water and salt in a small saucepan.
Bring to a boil. Mix well so that the salt is dissolved.
Remove from heat, add smoked paprika. Mix well
then add the almonds and soak for 30 minutes.
Drain.
Preheat the oven to 140oC.
Spread the almonds on a baking sheet lined
with baking paper.
Bake for 18 to 20 minutes.
Remove from oven and allow to cool completely
before tasting.
