Carrot Cake Cream Cheese Frosting

400 gr carrot
350 gr type 00 flour
300 gr sugar
100 gr brown sugar
350 ml of peanut oil
1.5 teaspoons baking powder
4  eggs
1 teaspoon baking soda
1.5 teaspoons cinnamon
1/2 teaspoon nutmeg
q.b. sale


·         Cream Cheese Frosting

50 gr butter
100 gr icing sugar
250 gr Philadelphia type spreadable cheese


·         Preparation

1.    In a bowl mix the flour, baking powder, baking soda, cinnamon, nutmeg, and salt and set aside.
2.    Take the two sugars and work them in a large bowl with the eggs until a wonderful amber creamy foam. Continue to work the cream by pouring the oil flush and work until everything is mixed. At this point add the carrots and mix with the flour. Mix all the ingredients with a wooden spoon to create a smooth homogeneous mixture and a beautiful color.
3.    If you want to be sure not to stick the cake to the pan, do this: grease the pan with oil and immediately line it with parchment paper, it will stick well and you will see that your cake, once cold, will come off easily !!!!
4.    Pour the mixture into the pan. Put the cake in the oven and after 40 minutes every 5 minutes stick a toothpick in the center! The cake will not be cooked until the toothpick comes out completely clean and dry.
5.    Let cool for about an hour. Remove the cake from the pan and decide what to do! If desired, the cake can also be served in this way.
6.    Put butter, icing sugar, and cream cheese in the food processor and beat until it becomes creamy. Then arm yourself with a spatula and make it what you want: above, below, inside or outside, the cream is a total pleasure.
7.    Decorate with some leftover carrots and you're done!
