Carrot Cake Frosting

Almonds 300 g
flour 80 g
Baking powder 1/2 sachet
Carrots 300 g
Eggs 4
Sugar 300 g
Lemon 1

·         Preparation

1.    Blend the almonds, sugar, and lemon zest in a mixer and put everything in a bowl. Chop the carrots, add the eggs and the sugar and almond mixture. Add a pinch of salt, sifted flour and baking powder; work until a homogeneous mixture is obtained.
2.    Grease and flour a round hinge mold of 26 cm in diameter and pour the mixture. Bake first for 10 minutes at 160 ° C and then raise the temperature to 180 ° C for another 30 minutes.
3.    In the meantime, prepare the icing for the cake: beat the egg white lightly and add the icing sugar, 1 teaspoon of lemon juice, and the yellow part of the grated peel. Leave to rest for 5 minutes, then refrigerate for another 10 minutes.
4.    Remove the cake from the oven, let it cool and spread it with the icing.
