Carrot Cake Recipe With Pineapple

·         Ingredients

Number of persons 8
200 g flour
200 g sugar or brown sugar
3 eggs
6 carrots (finely grated)
150 g butter (or oil)
1 pinch of cinnamon
1 can of pineapple in syrup (preferably crumbs)
75 g walnuts or hazelnuts
1/2 sachet of yeast
1 sachet of vanilla sugar

·         Preparation

1.    Preheat the oven to 180 ° C (thermostat 6).
2.    Butter a mold, beat the egg yolk with the sugars then add the flour, yeast, mix, then add the butter (or oil).
3.    Beat the egg whites until stiff, add them gently.
4.    Add the grated carrots, pineapple crumbs, and nuts.
5.    Pour into the mold.
6.    Cook for about 45 minutes (time to be adapted according to the oven). A knife blade stuck in the cake at the end of baking should come out dry.
7.    Do not hesitate to adjust the proportions of carrots/pineapple and nuts according to your tastes.


·         Author's note

A variation of the classic carrot cake. Other variants include adding raisins, replacing the nuts with pecans or hazelnuts. In any case, it's delicious!
