Ingredients
250 g grated carrot
125 g sugar
2 eggs
60 g crushed walnut kernel
125 g melted butter
200 g flour
1 packet of baking powder
1/2 teaspoon cinnamon

Preheat the oven to 5 (150 o C).
Whisk eggs with sugar. When the mixture
doubles in volume and becomes frothy, gradually add the flour and melted butter
while continuing to whisk then the cinnamon, yeast, and finally the grated
carrots and nuts without stopping whisking.
Mix well, pour into a cake pan and cook for 1
hour.
Allow cooling before unmoulding.

Author's note
Use half a packet of baking powder and add a
pinch of baking soda. Bicarbonate makes pasta rise and makes pastries lighter
and more digestible. This cake is surprising because we do not suspect the
presence of carrots!
