Carrot Cake Recipes From Scratch

·         Ingredients

200 grams of flour
120 grams of caster sugar
10 centiliters of sunflower oil
300 grams of grated carrots
4 eggs
2 c. cinnamon
1 C. 1 teaspoon vanilla extract
250 grams of mascarpone
2 c. icing sugar
1 lemon juice
lemon and orange zest

·         Preparation

1.    Mix the sugar, cinnamon, and flour in a bowl or the robot bowl.
2.    Pour in the oil and mix. Add the carrots (or vegetables) then the eggs one by one.
3.    Once the mixture is homogeneous, butter a cake pan and pour the preparation.
4.    Bake at 180 ° C for 50 minutes.
5.    Let cool before unmolding.
6.    Mix the mascarpone, icing sugar, zest, and lemon juice until a uniform mixture is obtained. Cover the entire top of the cake with a spatula or Maryse
7.    Place in the fridge for 1 hour.
