Cinnamon Coffee Cake Recipe

3 tablespoons Soffio Cannella coffee, still hot
200 g dark chocolate
3 tbsp. cocoa
1 tablespoon ground cinnamon
3 eggs
50 g brown sugar
1 sachet of vanilla sugar
125 ml fresh cream


1.    Preheat the oven to 170 ° or 150 ° in fan heat. The cake is baked in a bain-marie in a soufflé or cake pan, prepare a small pan, and a larger pan for the water.
2.    Coarsely crack the chocolate and cook in a double boiler, stirring carefully; it should not get too hot. Mix the cocoa powder and the cinnamon, then gently add this mixture to the espresso until completely dissolved. Then remove the chocolate from the double boiler, and stir well. Let cool.
3.    Mix the eggs and the sugar until a creamy consistency is obtained. Beat the crème fraîche, add to the egg-sugar mixture, and finally fold in gently without stirring the melted chocolate too much. Pour the mixture into a soufflé dish or terrine.
4.    Bake the chocolate cake in its small mold in a bain-marie for 1 h 30 at 170 ° then remove the two molds together from the oven and let stand for half an hour. Then remove the cake pan from the water bath and let stand overnight. Put the chocolate-coffee-cinnamon cake in the fridge and sprinkle with cocoa and a touch of cinnamon before serving. It's ready.
