INGREDIENTS

3 cups Cake flour (or all-purpose) 345 grams (otherwise any use will do)
1 tsp. at table Baking powder (baking powder) 15 ml
2 Eggs
2-1½ cups White sugar 337-450 grams

INSTRUCTIONS

Place the grill at the center of the oven. Preheat the oven to 325 ° F. Grease your mussels (no butter since it stains the mussels, use Crisco or any other vegetable fat) and flour the inside walls of the mussels. I use 2 round molds of 7 "(2" high) for this recipe. It gives me a cake of 15 servings in the end.
In a bowl, combine the flour and baking powder. Reserve.
In a stand mixer, whisk the eggs with the sugar for about 10 minutes or until the mixture turns white and is light and "fluffy". Whisk in the oil.
Add vanilla (or vanilla pod paste) and lemon zest.
At low speed, add the dry ingredients alternately with the milk, until the dough is smooth and homogeneous. Do not brew too much, it is sometimes better to finish brewing with a spoon so as not to create too much gluten in the mixture. Add the blueberries and stir gently with a spoon. Distribute the dough in the molds and bake in the oven until a toothpick inserted in the center of the cake comes out clean. I use another technique to know if the recipe is well cooked. With my delight, I put light pressure on the top of my cake, and if it bounces it is because it is baked. If the mark of my finger has left a mark, it is not cooked. Let cool 10-15 minutes. Unmold and wrap in plastic wrap and then cool completely in the refrigerator.
When cool, you can cut and begin to assemble the layers of cake.

NOTES

It can also be used for cupcakes. For cupcakes, fill your paper 3/4 full and bake at 350 ° F for 15-20 min.
