Old Fashioned Carrot Cake Recipe

For the cake
2 cups of sugar
3/4 cup vegetable oil
3 eggs
1 tsp vanilla extract
3/4 cup buttermilk
2 cups grated carrots
1 cup shredded coconut
1 can (15 oz) crushed pineapple, drained
2 cups all-purpose flour
2 tsp baking soda
2 tsp ground cinnamon
1 1/2 teaspoons salt
1 cup chopped walnuts

·         For the icing

1/2 cup butter
1 packet (250 g) cream cheese
1 tsp vanilla extract
4 cups icing sugar

·         Preparation steps

Preparation          : 30 min
Cooking               : 55 min
Extra time            : 35 min cooling
Ready in               : 2 hours

1.    Preheat the oven to 350 degrees F (175 degrees Celsius). Grease a 9 x 13-inch cake pan.
2.    In a large bowl, combine sugar, oil, eggs, 1 tsp vanilla extract, and buttermilk. Add carrots, coconut, and pineapple.
3.    Mix salt, flour, baking soda, and cinnamon in a bowl. Gently add to the carrot mixture. Add the nuts. Spread the mixture in the cake pan.
4.    Bake for 55 minutes, or until a toothpick inserted in the middle of the cake comes out clean. Allow cooling.
5.    In a bowl, whisk together the icing ingredients until smooth. Glaze the cake, once it has cooled.
