Soda bread with ribot milk, raisins - anise

380 g T 65 flour
50 g oatmeal - to sprinkle
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
50 g butter
1 tbsp honey
2 tbsp green anise seeds
120 g raisins
300 ml of robot milk (fermented milk) - to brush

Preheat the oven to 190oC.
Combine flour, baking powder, baking soda, and salt. Add the butter cut into small pieces. With your fingertips, crush until you get a sandy mixture.
Add oatmeal, anise seeds, and raisins. Mix, add honey. Pour in the ribot milk. Mix and knead for 1 to 2 minutes just so that the dough is homogeneous.
On a well-floured work surface, spread the dough in a round shape about 3 or 4 cm thick. More or less according to your tastes.
Brush with a little ribot milk and sprinkle with oatmeal.
With a knife, cut the dough into the shape of a cross.
Arrange the bread on a baking sheet lined with baking paper.
Bake for 30 to 35 minutes. Adjust the baking time to the thickness of the bread.
