Thick apple pie - honey

For a 20 cm mold:
110 g T 65 flour
20 g blond sugar - for the mold
1/2 tsp baking powder
40 g butter - for the mold
2 tbsp olive oil
1 egg
1 tbsp orange blossom water
1 tbsp lavender honey
1 large apple or 2 small
I hesitated between rum and orange blossom...
but with honey, I prefer the orange flower
Or jam of your choice
The dough can be done by hand.
Combine flour, sugar and baking powder in a
blender bowl. Mix by the pulse to mix. Add the butter cut into pieces and the
olive oil. Mix until you get a sandy mixture. Add the egg and mix until smooth.
The texture is very soft, it's normal.
Divide into a buttered pan lightly sprinkled
with sugar. Equalize the surface with a wet spoon.
It's a bit of a hassle to unmould so I advise
you to use a hinged mold or to line the mold with baking paper.
Store in the refrigerator for 1/2
hour, or longer.
Preheat the oven to 180 o C.
Peel the apple. Seed and cut into thick
slices.
Spread the honey over the dough, add the apple
slices and bake for about 45 minutes.
